Make your own low fat or vegan banana bread!




I recently found a delicious a recipe for banana bread. And, I got some good compliments on it, too. But, I decided I wanted to experiment and make it different. Surprisingly, it tasted just as good without the yolk. So, If you like regular banana bread, you'll like this!



           
                                        

    Directions (revised)
 Preheat oven to 325            Use a greased loaf pan
3 bananas
1 tablespoon coconut or almond milk  (it doesn't change the taste if you use either almond or coconut)
a pinch of salt
1 teaspoon baking soda
1 teaspoon baking powder
to make it low fat, use egg whites...to make it vegan use and egg replacer. You can usually find egg replacers at your local health market
1 tsp cinnamon  
3/4 cup sugar
2 cups all purpouse flour
8 tablespoons coconut butter  


 In a medium sized bowl, mash bananas with a fork. Add the almond or coconut milk and cinnamon.
 
 In a large bowl, cream sugar and butter. Then, add the eggs one at a time. Beat well after each egg. Then add add flour, baking soda, salt and baking powder.
 Add the banana mix to the creamed sugar mix. Then pour in the bread pan. 
Bake for 1 hour to 1 hour and fifteen minutes.
